Recipe for Shepherd's Pie

Shepherd's pie is another of my dad's easy recipes, and it is a one dish meal really. You don't have to have anything else, if you don't want to. I like to have garlic toast with mine though. Different people make shepherd's pie differently. I make it quick and easy.

Here is what you need to make shepherd's pie:

1 pound of ground beef
1 onion
6 mushrooms sliced
1 box of onion soup mix
1 envelope of brown gravy mix
1 and 1/2 cups of water
instant potatoes
1 cup of sharp cheddar cheese (you can substitute with or add Parmesan cheese if desired)
3/4 cup of sour cream

Here is what you do:

Brown the ground beef with the onion and mushrooms. Drain the grease from the meat and add water and onion soup mix and the gravy mix. Let the mixture simmer for a few minutes until it is of a rich gravy consistency. When the meat mixture is done pour into a round or oblong casserole dish. Put half the cheese on the meat layer.

Now make enough instant potatoes according to the directions on the package. You want enough to cover the the meat mixture, so you might want to make 3 servings to be sure you have enough. Before you spread the potatoes add the sour cream to it and blend it in; and then spoon them on top of the meat mixture and spread it around so it all is covered. Top with the other half of the cheese and bake in a 350 degree oven for 30 minutes. Let stand for 10 minutes and serve.
